Seville in May was orange blossom and 35 degrees of commitment. The cathedral and the Alcázar demand your mornings; the tapas crawl owns the rest. Our list has a Lebanese counter (Beirutina) we didn't expect to love in Andalusia and Casa Pepe Hillo for doing the classics straight.

Semana Santa and the Feria transform the city — book a year out or skip those weeks entirely. We ate at 20 restaurants, hit one bar, and stayed in one hotel that made the heat bearable.
