Edinburgh in August is two cities — the Fringe's glorious chaos on top of the granite one — and we did it the full-contact way: The Kitchin's Leith tasting menu, Bramble's basement drinks, late shows, early haar. The castle mound at dawn before the crowds is the version to remember.
We covered 15 places across restaurants, bars, and where to stay, all tested during festival season when booking ahead isn't optional — it's survival. This is what stuck with us.
