Rome

We came back to Rome three times during our year in Europe, and it never once felt like enough. The city demands repetition—not because you missed something, but because the same corner reveals something new depending on the light or the hour or how hungry you are. We stayed at hotels all over the city, normally for the bar. A walk through Trastevere takes you through layers of the city that don't announce themselves. One night we sat outside with limoncello and a novelty hand that held our drink while the Colosseum glowed behind us. Another night we ended up at Drink Kong, all neon and smoke and cocktails that tasted like someone had a specific argument to make.

The food was the kind that resets your expectations. Da Enzo had a line, but we waited because the cacio e pepe was that good—just cheese and pepper and pasta water turned into something you think about weeks later. Dar Poeta made pizza we ate standing up. La Pergola was the opposite: a Michelin meal with plating that looked like tiny sculptures, the kind of dinner that makes you sit up straighter. We took the Dolce Vita train overnight to Portofino, which felt like stepping into a different century, and did a private Vatican tour that made the crowds almost bearable.

Rome doesn't try to be anything other than itself. We kept coming back because it never asked us to.
