Warsaw surprised us more than any city that spring: Hala Koszyki's food-hall energy, pierogi done seriously, and a cocktail scene (The Roots, BackRoom) that's quietly top-tier. The Old Town — rebuilt brick-by-brick from paintings — hits different once you know.

We stayed at Hotel Bristol and mapped out 5 bars, 5 restaurants, and a couple sights worth the detour. May through September brings the best of it, especially Chopin concerts in Łazienki Park on summer Sundays.
