Bruges looks medieval-perfect and drinks even better: 't Brugs Beertje's 300-beer list, Le Trappiste's vaulted cellar, and De Halve Maan's brewery tour with the beer pipeline under the streets. Vlissinghe has poured since 1515. The Rozenhoedkaai at dawn, before the day-trippers, is the postcard that's actually real.

We spent our days climbing the Belfry and wandering between 6 restaurants that fed us well—from Mozart's Belgian classics to Sanseveria's bagels. Everything here felt personal, tested, and worth the cobblestone walk.
